How to cook chicken tinola?

The very first recipe that I have learned from my grandmother and one of my many favorite Filipino dish to prepare for my family.

Perfect for rainy weather because of the very delicious, hot soup!

Here's the ingredients:

1. 6-8 pcs Chicken wings (You can also use thigh or breast part)

2. 1 medium sized green papaya or sayote

3. Chili leaves

4. 6 cloves of garlic, crushed and minced

5. 1 medium sized red or white onion,chopped

6. 5 slices of ginger, minced

7. Cooking oil

8. 8 cups Chicken stock or water

9. 2 tablespoons of fish sauce

10. 1/4 teaspoon of ground black pepper

Steps:

- Heat cooking oil in a sauce pan

- Saute onion, ginger and garlic

- Pan fry the chicken for 2-3 minutes on each side

- Add fish sauce

- Add chicken stock or water and bring to boil for 30 minutes over low medium heat

- Add green papaya or sayote and let it simmer for 5 minutes

- Add chili leaves

- Add fish sauce (depending on your taste) and black pepper to taste

- Let it simmer for 5-10 minutes
