How to cook pork sinigang?

Pork Sinigang is an all-time Pinoy favorite comfort food. The hot tamarind base soup is perfect for rainy days!

Here's the ingredients:

1. 1 kilo Pork belly, cubes

2. 3 cups Kangkong or water spinach

3. 1 cup Eggplant, sliced

4. 10 String beans, cut into 2-inch lenght pieces

5. 3 pieces long green chili or siling pansigang

6. 2 pieces Tomatoes

7. 1 piece Onion

8. Tamarind powder

9. Fish sauce or salt

10. Ground black pepper

11. Cooking oil

12. Optional vegetable: Radish and Taro or Gabi

Steps:

- Saute onion and tomatoes over low medium heat

- Pan fry the pork for 1-2minutes on each side and then add the fish sauce or salt

- Add 8 cups of water and bring to boil for 40 minutes or until the meat is tender.

- Add the string beans, eggplant and long chili pepper or siling pansigang, let it simmer for 5 minutes over medium heat

- Add tamarind powder, mix well

- Add the kangkong and season with pepper, let it sit for 2 minutes over low medium heat.
